Second Spring sources hulless oats from North America for their sprouted oat flour. Oats normally grow with an inedible hull that must be removed before rolling or milling. However, hulless oats naturally grow without a hull, so no dehulling is necessary. This allows them to sprout the whole grain, keeping all the fibre and protein intact. After sprouting and drying, they mill the whole hulless oat kernel, resulting in a nutritious, 100% whole grain flour.

Storage & Shelf Life:
Second Spring flours are milled with nothing removed or added. This means naturally occurring oils remain present in the flour after milling. Sprouting helps to stabilize these oils which keeps the flour from going rancid more quickly than unsprouted flours. All of their sprouted flours can be kept in your pantry at room temperature or kept in the freezer in an airtight container.
